Happy Fat Tuesday! Red beans and rice

Hope you all are celebrating Fat Tuesday with a great Cajun dish like gumbo, jambalaya or red beans and rice. We chose the latter tonight because I had dried small red beans just waiting for such an event.

I put the beans, unsoaked, in my crockpot this morning with four cups of vegetable broth and two cups of water plus 2 bay leaves and about 1/4 onion. I cooked them on low and when I got home at five they were perfect!

To the cooked beans we added about half of package of smoked turkey sausage. While that warmed we cooked up some plain white rice. When everything was ready we mashed up the beans a little bit and then ladled servings of beans and sausage over rice. Yum! My ratio is 1/2 cup of rice to 1 cup of beans. This is SO good and SO easy!
