It’s “use every appliance I own night!” Well, not quite, but when I took this pic it sure seemed like it! I had pintos with green chiles in the crock pot, bread in the bread maker and the beginnings of salsa in the food processor. Oh, and a chicken enchilada casserole in the oven!
Now I have a question for you: if you aren’t cooking beans in the crock pot, why not??? Just rinse your pintos, put them in the crock pot with six cups water and broth, add two bay leaves and set the pot to low for eight to ten hours. Oh, add some salt too!
On to the salsa…i had a ton of small cherry tomatoes and some roasted tomatillos in the freezer so I decided to make a fresh salsa to go with our casserole.
1 cup cherry tomatoes
1/2 cup roasted tomatillos
1 small sweet onion
Blend everything in the processor. It’s not the prettiest salsa but it’s sweet and yummy!
