To be honest I just used this as a guide. I used yellow squash instead of bell pepper, used two vine-ripe tomatoes, 1/2 cup broth and some tomato paste instead of canned tomatoes, and added greek yogurt instead of heavy cream. Still, this was my guide. I plan to make this many more times!
I served this over brown rice that we had leftover. It was awesome!
