Cooking Light’s pappardelle with zucchini ribbons

Tonight I made yet another CL recipe:

This was a very simple recipe and, with a few zucchini plants started in the backyard, it will probably become a super popular one this summer.

The only problem is that using a vegetable peeler to make “ribbons” takes forever. So I just sliced the zucchini thinly and did the best I could. The rest was great and it would be even better with some fresh grated Parmesan.
