Just today I got six eggs from my friend Richie, who had so many from her chickens that she couldn’t eat them all. Also today I received a bag of cherry tomatoes from another work friend. So what happened at dinner tonight? I made a pasta sauce with mushrooms, onion, garlic, the fresh cherry tomatoes and cream cheese. I made a giant salad with some boiled eggs piled on top and even cooked a few extra for breakfast tomorrow. There’s nothing quite like a piece of buttered toast topped with slices of a lovely boiled farm fresh egg.
I hope you guys are enjoying the bounties from your own garden or someone else’s. It’s that time of year when we purchase lots and lots of ears of Olathe Sweet Corn, Palisade Peaches and wait anxiously for the first roasted green chiles of the fall…mmmmm.
