Pasta with asparagus

Asparagus.  That’s the only ingredient I knew for sure was going in tonight’s dinner before I got home.   I broke down and bought it the other day even though it wasn’t on sale.  I have a fondness for it and had not had any in weeks!  So tonight we had pasta with asparagus, spinach, onions, grape tomatoes and feta cheese.  It was awesome!

First I sauteed 2 cloves of garlic, some onion and 1 bunch of chopped fresh asparagus in 2 tbsp olive oil.

I added whole grape tomatoes about 10 minutes in to the cooking process because I just wanted them to pop open and not cook down too much.

I added the pasta and feta cheese to the veggies and “sauce” and cooked everything together briefly and then…

I topped each bowl of pasta with 1/2 a piece of the leftover lemon and chive crusted flounder from last night.  No, I didn’t make it, Sea Cuisine did!
